Coleslaw

Coleslaw is one of those tried and tested side dishes that I grew up eating on the regular, especially for what we in South Africa call “seven colours” (or is it several colours…?) Sunday. This South Africanism describes how when we grew up Sunday was the day when our mothers would spend hours in the kitchen preparing an elaborate meal for the family inclusive of all kinds of vegetables, proteins and starch – enough to feed an army. One of the side dishes that always featured in our home was coleslaw made simply and without too much fanfare. I’ve since adapted my mother’s delicious recipe with some additions of crunchy, flavourful elements that elevate a humble coleslaw to a dish worthy of being in a cookbook – hint hint!
