Creamy Tomato & Ginger Mussels

It’s official. I’m addicted to shellfish, and mostly mussels. Elsewhere on this blog you will see my Creamy Garlic Mussels recipe which is one of my favourite party tricks especially when it comes to starters. But this time around I decided to switch things up a bit and try out something different to suit the cooler Autumn temperatures, which demand something a little more indulgent. So this is my super yummy recipe for mussels resting in a creamy tomato and ginger sauce. It has just the perfect amount of bite from the chillies and fresh ginger which is nicely balanced by the cream and chicken stock. Ever heard of perfection in a shell? Well this is it!
