We eat a lot of curry in my home. Whether its Summer, Winter, Autumn or Spring, we always have time for a good, slow-cooked, hearty dish. Over the last few months I’ve been making a lot of effort to reduce our intake of red meat - it’s harder than you think given that I happen to live with a red meat “enthusiast (read: addict)”!

So I’ve been testing my prowess with seafood curries as a healthier, even tastier, alternative to beef or mutton. A resounding success! Not only does my Thai Prawn Curry take me back to my unforgettably romantic holiday in Thailand, it also satisfies those who are always inclined to think red meat is better than seafood. Finally, this dish is ready in 20 minutes so it’s perfect for a midweek dinner.
