Yes, buying pre-made soup from that food shop whose name starts with a “W” is great, but what kicks your stature up a notch in the eyes of your family is making all kinds of delectable veggie-filled soups from scratch. The options are endless and the kudos will make you feel good, I promise. One of those options is finally knowing what to do with the head of cauliflower that’s been sitting in your fridge for a week. Personally, I find cauliflower to be one of those boring old veggies that I need to spruce up in order to enjoy. So here’s an idea for you…a yummy Cauliflower & Leek Soup which you can enjoy on a chilly Autumn or Winter evening. Of course the bacon is optional, but personally, I always choose that option!
